Ingredients
1 big Mackerel cleaned and slit.
2 tsp crushed black peppercorns ( but you can use it as per your taste or how spicy you want it to be )
2 tsp ground coriander
1tbsp finely grated lemon zest

Olive oil to drizzle over the fish
Salt to taste

Garnish
1 orange
1 tbsp each of red, yellow, orange, green bell pepper finely chopped
2tbsp chopped coriander
1 small red onion, peeled and thinly sliced
Mint
Seasame seeds
Method
Mix the black peppercorns, ground coriander,lemon zest and salt together in a bowl and marinade the fish with this mixture. I left it overnight.
I used an electric griddle preheated at 180 degrees. Drizzle olive oil over the marinated Mackerel and cook bringing down the heat to about 100 degrees for about 1/2 hour on both sides each till the Mackerel is cooked through.
Grate the zest from half an orange and stir into the coriander mixture and sprinkle over the fish along with the finely chopped bell peppers and seasame seeds.
Then slice the orange into segments and scatter sliced red onion, bell peppers, mint and coriander.Top with the grilled Mackerel and serve immediately.
